Below is an outline of the 4 days and the basic format for
each day. |

Monday 4th
July - Registration & Introduction | |
|
9am - 11am Registration
An introduction to the course and
discussion on live steer assessment begins at 1pm. At 3pm participants move to
the cattle yards for the 'hands on' session of live steers determining muscle,
fat coverage etc. Participants are given a lead in as to what will be expected
on the following day. |

7pm Night Lectures
Night lectures begin with the
Overjudges' comments on steer selection.

Tuesday 5th
July - steer judging | |
|
On the first day of
judging, participants are presented with a number of different groups of
steers. The Overjudges comment on the animals, offering advice and tips on
assessing each live animal. Market specifications are given and participants
are asked to place the steers in order of merit, 1 to 4, to suit the
requirements of various markets. A team of four steers are also selected for
the carcase assessment on the final day.
3pm Demonstration
Groups
Demonstration groups
on the selection of both male and female breeding cattle to complement the
steer market specifications.
7pm Night
Lectures
Overjudges give
comments on their selection criteria for breeding cattle to suit different
markets and environments.

Wednesday 6th
July - Breeding Cattle | |
|
The day begins with pens of 4 bulls at the cattle yards. Participants will
be asked to place the bulls in order of merit to suit given market
specifications or environments. Pens of 4 females will also be judged in the
same manner. A larger group of heifers will be presented for participants to
judge based on EBV figures.
On Wednesday evening (7pm) there
will be an informal dinner with presentations being made to Overjudges and
participants.

Thursday 7th
July - Carcase Assessment | |
|
This session will be held at the Hamilton TAFE College involving the
college butchering staff. A carcase is broken down into retail cuts and the
team of 4 chosen steers, from Monday, will be assessed on the hook.
1pm Closing Comments
Time is allowed at the end of the
course for Overjudges and participants to give feedback and their thoughts on
the course.
